COLOMBIAN CHEESECAKE
Ingredients
7 Tablespoons of sugar
6 Eggs
1 Can of condensed milk
2 Tbs of liquor (sherry, port)
1 Cup of mozzarella cheese or 125 grams of cream cheese
Preparation
1) Make light caramel with the sugar (Melt sugar in a dry pan, over a low
burner to make a caramel).
2) Spread hot caramel in a baking dish. The baking dish must be ready for the
hot caramel. If not ready the caramel gets hard very quickly and will have to be
reheated.
3) In the blender mix well the rest of the ingredients .
4) Pour the mix into the caramelized dish.
5) Place the caramelized dish in a bigger dish with water. Do not let the
water leak into the smaller dish.
6) Bake it at 162ºC or
325ºF for about 40 minutes.
7) To check if the cake is ready, poke it with a knife. If the cake doesn't
stick to the knife, it is ready.
